Eggplant, a favorite Mediterranean ingredient

Of all the vegetables and fresh produce out there, eggplant (aubergine) seems to be one of the most divisive ingredients. I get it! Many people have had some unfortunate encounter with eggplant where it turned too spongy, too bitter, or too soggy and overcooked.

Mexican Lasagna

This idea came to me and it worked great!

There are many ways to make it so try it out


Ingredients

8 -10 soft tortillas

1 bag shredded Tex Mex Cheese or

any cheese you like, you can grate your own as well

Jell-O Pie

Ingredients

I package of flavoured Jell-O

I cup boiling water

1 cup cold water

I package of whipped cream

as much milk as recipe calls for

Chicken Noodle Soup

Ingredients: 4 quarts chicken stock. The kind in carton is best. I use Swans.

4 boneless chicken breast with skin removed. 1 onion, diced 2 carrots, diced 2 stalks celery diced up fine 8 ounces egg noodles salt and pepper to taste

You will need a big stainless steel pot for best results. Also for best results take your time and start preparing about 3 hours before serving.First dice up all your veggies. The smaller the better & the more place for chopping the better. Carrots tend to fly everywhere! After your done chopping up veggies, set your veggies in small bowl in fridge. Next get out all your chicken and wash all the blood off of it real good and let it drain. Then get 2 large pans on the stove and cook your chicken enough to get rid of all the bad red.
